
If a pack of potatoes eyes you from across the store, stay cool. Everything will be okay. It’s when they can’t look you in the eyes—that’s when you steer clear. However, I’ve never met a potato I haven’t found appealing, and on Tuesday night, when Nate and I did some midweek shopping, I decided a couple of Idahos looked like they might make a tasty snack.
And…I was right. I easily turned them into chips (crisps) and sprinkled them with a little salt and curry powder. Here’s the recipe:
2 baking potatoes (peeled and sliced super thin)
2 tablespoons of olive oil
Sea salt
Curry powder
Method:
–Preheat the oven to 425° F and move the top rack to the top position.
–Place the potato slices into a large baggie with the oil. Shake them around to get them good and coated.
–Put the slices onto a lightly sprayed baking sheet, in a single layer.
–Lightly sprinkle with salt and curry powder.
–Bake 10-20 minutes—or until crispy.
–Let cool completely before eating.
Results: They were delicious, but we didn’t taste the curry powder too much, so you can skip this step—or really pile it on.
Serve these potato chips (crisps) with:
–a bucket of hummus
–a trough of onion dip
–a cooler of wine coolers
–a trip to a cozy lodge with a fireplace
–a raucous game of foosball
–a rousing round of Uno
–giant bunny slippers
–your best friend’s football-shaped dinnerware

Love the idea of the curry powder on these, and I’ve only met one potato I didn’t love, it was canned, believe it or not!

They were really awful. My mom thought they would be handy camping, but we all took one bite and I never saw them in her grocery cart again!

I’ve never really thought about what my favorite thing to do with a potato. I’d have to say buy a bag of Kettle chips and eat them. I particularly like the ones that have folded into themselves while being cooked. Extra crunchy that way!

This is a great idea. We’ve made our own french fries, but I like this idea too. I might have to give it a try. Serve with bunny slippers. That sounds familiar. Is this a running (sorry, hopping) theme? 🙂

I love fries but don’t make them at home. If I’m using potatoes at home I’m either roasting them (baby potatoes tossed with olive oil, salt and rosemary) or adding them to stew
