Take a Dip

A splash of something splattered onto the floor near the bathroom sink. When I looked up, I noticed a puffy line-like thing in the ceiling right above the splatter, but it looked dry.

“Hey, Nate!” I said. “Can I borrow you for a moment?”

When Nate made his way up the stairs, I pointed to the splatter, and then to the ceiling, and said, “Maybe these two things aren’t related.”

“Oh, they’re related,” he said. “We have a leak.” And then, he contorted himself into very painful-looking positions after he climbed the ladder into the attic to place a plastic tub under the leaky parts and call it a day.

Nate at least deserved a snack. I also needed a reward for holding the ladder.

So I grabbed a bunch of ingredients from the pantry and refrigerator. Nate asked me what I was making, but I didn’t quite know yet. Here’s what I grabbed: walnuts, a jar of roasted red peppers, olive oil, salt, garlic cloves, black peppercorns, cayenne pepper, and grated parmesan cheese.

To a bowl, I added:

–1/4 cup of chopped walnuts

–2 tablespoons of olive oil

–3 cloves of minced garlic

–1/4 teaspoon of cayenne pepper

–1 12-ounce jar of roasted red peppers (in vinegar/juice, not oil)—chopped

–2 tablespoons of grated parmesan cheese

–1/4 teaspoon of freshly ground black pepper

–1 teaspoon of salt

Then, I got out the hand-held immersion blender and blended the ingredients as much as possible, though they still remained somewhat chunky, and splatters of red pepper juice flew through the air like a Halloween movie sequel.

Throwing some rosemary crackers on a plate, I called the concoction “a dip of sorts, though it could be a spread, or maybe it might be good with extra cheese or cream cheese mixed in.”

Results: We finished the batch. The dip brought out the sweetness of the red peppers, but the salt and parmesan cheese added a good savory blend.

This “dip of sorts” takes the edge off the following maladies:

–A leaky roof

–Getting locked out of your computer

–Ruining your bra in the wash

–Leg pain from daring yourself to kick your legs “extra high” for “fun” while watching an exercise video

–Having the rudder of a boat you’re on ripped out by fun-loving orcas (This never happened to me, but I suspect I might be overjoyed at seeing orcas–and also terrified. I’d need some red pepper dip later.)

–The “Taste the Biscuit” song by Toasters N Moose

–A warm and soggy movie theater seat

  1. trying to eat a healthy breakfast of peaches, that leaked all over my refrigerator, and I had to take it all apart, then fight off ants that arrived, and broke the bowl it was all in. took a very long time and then I ate a bagel instead. your snack sounds great

  2. This must be delicious! It reminded me of a Lebanese dip/sauce called “Muhammara”, that similarly, combines roasted red peppers and walnuts. That one doesn’t contain Parmesan cheese, which I definitely prefer. So I’ll go with your version! 🙂

  3. I don’t know that I ever deserve a snack, but I know that midafternoon after working all morning and after lunch. I do like a small piece of cheese to get me to dinner. 😊
