Dashing Through the Dough: Candy-Cane Sprinkled Shortbread Cookies

The merry blob of cookie dough in my refrigerator just received a festive festooning of peppermint sprinkles. And the Fixin’ Leeks and Leeks Team approves.

To make the merriest of shortbread cookies, I used Ina Garten’s recipe. I shaped the cookies using a cookie dough scoop, placing them on a cookie sheet, and lightly flattening them into disks. Ina Garten’s recipe tells you to mix with a food processor, but I used a beater for the butter and sugar and then mixed in the flour/salt with my hands to form the dough. I also skipped the “dip in melted chocolate” step so that I could whack a few candy canes over the head with a rolling pin instead. (I sprinkled the candy cane pieces onto the cookies before baking.)

Results: These cookies are rich and buttery, with just a hint of peppermint.

Serve them with any one, or a combination, of the following:

–A holiday parade

–A sparkly sweater

–A snow globe featuring an orca that’s tipping a Washington state ferry over

–Twelve dancers dancing

–A bucket of champagne

–Dasher and Prancer

–Tickets to Hawaii

  1. As we have established, me not baking is better for the Christmas spirit, and everyone’s safety! But those cookies look so delicious and even harmless, I might give cookie-baking a try once I get better! For now, they look great and very cheery! Wishing the entire team a great December, because no need to wait for the end of the month for that holiday cheer, right?
