
A floofy flurry of festive marshmallows invaded the Fixin’ Leaks and Leeks Headquarters, and I knew just what to do with them. I stuffed their cute little faces inside hot melted butterscotch chips and peanut butter to create a cookie for the holidays. The cookie is actually called a confetti square, and the recipe I sourced says it comes from Canada.
And, this bar cookie couldn’t be easier. I followed the Celebration Generation blog post for “Easy Butterscotch Confetti Squares.” Basically, you just dump a package of butterscotch chips, 1 cup of peanut butter, and ½ cup of unsalted butter into a microwave-safe bowl and let it all melt together in the microwave. Then, you can just stir in some pink, green, and white marshmallows—and pour the whole thing into an 8 x 8-inch glass pan. Let the refrigerator do the rest of the work as the mixture cools for about an hour.
The smell of the butterscotch, butter, and peanut butter melting together was delightful. It’s what I imagine an exploding cookie dough factory would smell like.
I was concerned about the addition of the marshmallows, though. I think I remember buying a similar cookie bar at the school cafeteria that had crunchy cornflakes in them, and I wished I had stirred in toffee chips and/or cornflakes instead for crunch, but they certainly wouldn’t have been as colorful as when you slice these up to serve them.
Results: Sweet, smooth, buttery, and floofy. Alex’s exact words: “It’s like biting into a cloud.”

–The safety inspector of the nearest cookie dough factory

Right now, my easy to make treat is an egg and almond flour cookie with stevia, baking soda, salt, avocado oil, and a little water. Mix it all up and then add blueberries and chocolate chips. Easy, satisfying, and hearty.

Are those cookies as sweet as they look? They remind me of French-Canadian desserts. My easiest treats were from a children’s cookbook when I was a kid. You mixed together butter, rolled oats, sugar, and cocoa and put them in the fridge. (No baking.) How could I have eaten something like that??

Yes–they are very sweet. We probably will take our time finishing these. And, yes! I remember a lot of children’s cookbooks that basically told you to roll peanut butter in all kinds of ingredients and call it a cookie. I loved it as a kid!

I have a very quick recipe for apple scones, done a literary 15 minutes plus 10 in the oven but my regular easy treat is banana bread, it just takes a long time in the oven though . Enjoy your treat dear, it looks delicious

Those look very yummy and perfect with the sheepdog. For a second, though, I thought the list at the end that included said sheepdog was actually a list of ingredients. 😉 I love a good coconut chocolate cookie or New Mexico-style biscochitos as my holiday cookies.
