
The sugar plums dancing in my head are turning in their tutus ‘cause they’re all tapped out. But they left some butterscotch morsels, doused in a good tempest of butterscotch liqueur in their place. And as we all know, the show must go on, bottoms up, cheers, down the hatch, nom-nom-nom.
To make the best butteriest butterscotch bite, grab you best butterscotch buddy (BBB) and whip up a chocolate chip cookie recipe, but without the chocolate chips or itty-bitty teaspoon of vanilla extract. Up the razzle dazzle a bit with butterscotch liqueur—or maybe even butterscotch ice cream topping—who knows? It might work just as well. Either way, the time between now and Christmas will just whiz by like high-kicking Rockettes pulling a sleigh while Buddy the Elf shouts, “Son of a nutcracker!”
Boozy Butterscotch Cookies
Ingredients:
2 ¼ cups of flour
1 tsp baking soda
¼ tsp salt
1 cup of butter (softened)
1 egg
¾ cup of granulated sugar
¾ cup of brown sugar
¼ cup of butterscotch liqueur
Butterscotch morsels/chips
Method:
Heat the oven to 375 (F) and mix together the flour, baking soda, and salt in a medium-sized bowl. Then, cream the sugar and butter together. Mix in the egg and liqueur. Add the flour a little at a time while mixing. Then, fold in the butterscotch chips. Drop them by rounded tablespoons or with a cookie scoop onto a baking sheet. Bake for 8-10 minutes.
Results:
These cookies are soft and buttery, and they have a little kick to them. (I’m not sure if all the liqueur bakes out.) They almost taste like candy or fudge—and they’re addictive. Double the recipe if you can.
Serve these cookies with:
- An elf on the shelf who is looking the other way
- Blitzen the reindeer who sounds like a lot of fun
- A trip to a Christmas tree farm run by the Keebler Elves and perhaps some festive Smurfs
- Troughs of eggnog
- Wayward sugar plums, dancing their way toward the other side of town
- The biggest book of seasonal bedtime stories, filled with gingerbread heroes and their candy cane sidekicks.
